  • 2 tablespoons granulated erythritol optional
  • 1 ¼ cups blanched almond flour
  • 2 tablespoons protein powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon xanthan gum
  • ¼ teaspoon salt

  • Preheat oven to 300°F (150°C).
  • Line a 4x4 inch square pan with parchment paper.
  • Whisk together eggs and oil until combined and slightly frothy.
  • If using erythritol, add it now and whisk until dissolved.
  • Add Greek yogurt to the egg mixture and whisk until smooth.
  • In a separate bowl, whisk together almond flour, protein powder, baking powder, xanthan gum, and salt.
  • Gradually add dry ingredients to wet ingredients and stir until just combined.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 50-55 minutes until golden brown and a toothpick comes out clean.
  • Cool in pan for 15 minutes before removing, then cool completely before slicing.
  • Slice into 7 generous slices and enjoy with your favorite low-carb toppings.
