Ingredients
  

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 2 teaspoons active dry yeast
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup warm milk about 110°F
  • 1 tablespoon unsalted butter melted
  • 1 tablespoon pure vanilla extract

For Frying

  • vegetable oil for frying
  • powdered sugar for dusting

Instructions
 

Preparation

  • In a large bowl, combine the dry ingredients: flour, sugar, yeast, and salt. Mix well.
  • In a separate bowl, whisk together the wet ingredients: warm milk, melted butter, and vanilla extract.
  • Gradually pour the wet mixture into the dry ingredients, stirring with a wooden spoon until a dough forms.
  • Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
  • Place the kneaded dough in a greased bowl and let it rise covered for about 1.5 hours until doubled in size.
  • Once risen, punch down the dough and roll it out to about ¼ inch thickness. Cut into 2x2 inch squares.
  • Heat vegetable oil in a deep fryer or pot to 360°F.
  • Fry the beignets in batches for about 1-2 minutes on each side, until puffed and golden brown. Drain on paper towels.
  • Dust the fried beignets with powdered sugar and serve immediately.
  • Allow to cool slightly on a wire rack if not serving immediately.

Notes

Maintaining the correct oil temperature is key to ensure the beignets cook properly without burning or becoming greasy. For proofing, a warm, moist environment helps the dough rise ideally.
