Ingredients
  

Bacon

  • 16 slices center-cut applewood smoked bacon 14 ounces; not thick cut

Bread

  • 12 slices hearty white sandwich bread

Tomatoes

  • 16 slices vine-ripened tomatoes from about 3 (6-ounce) tomatoes

Seasoning

  • ½ teaspoon kosher salt for table salt use half as much by volume
  • ¼ teaspoon freshly ground black pepper

Mayonnaise

  • ¾ cup mayonnaise 6 ounces

Lettuce

  • 8 leaves romaine lettuce cut in half crosswise; total of 6 ounces

Turkey

  • 16 slices deli turkey about 1 pound; preferably hickory smoked

Cooking Instructions

  • Adjust oven racks to upper-middle and lower-middle positions. Heat oven to 400°F (205℃). Line 2 rimmed baking sheets with parchment paper. Arrange bacon slices in a single layer on prepared baking sheets. Bake bacon until browned and crisp, 15 to 20 minutes. Transfer cooked bacon to a paper towel–lined plate to drain.
  • Brush bread slices very lightly on both sides with reserved bacon fat, then arrange on 2 clean baking sheets. Broil on the upper-middle rack, flipping halfway through, until bread is light golden brown, 1 to 2 minutes per side. Set aside.
  • Sprinkle tomato slices all over with salt and pepper; set aside.
  • Spread 1 tablespoon mayonnaise evenly over 1 side of each bread slice. Layer ingredients on prepared bread slices: 2 cut lettuce leaf halves, 2 tomato slices, 2 cooked bacon slices, and 2 turkey slices. Slightly overlap as needed.
  • Top each sandwich with 1 bread slice, mayonnaise-side down. Press gently to secure. Repeat layering the remaining ingredients on top of the sandwiches.
  • Top with the remaining bread slices, mayonnaise side down. Press gently to secure and insert 4 toothpicks into each sandwich, spaced evenly. Cut each sandwich on the diagonal into triangular quarters. Serve.
