Ingredients
  

  • 3 lbs Beef Chuck, cut into 1-inch cubes
  • 2 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 1 Jalapeño, seeded and minced (optional)
  • ¼ cup Chili Powder
  • 2 tablespoon Ground Cumin
  • 1 tablespoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Cayenne Pepper (optional)
  • ¼ teaspoon Ground Cinnamon (optional, but trust me!)
  • 1 28 oz can Crushed Tomatoes
  • 1 15 oz can Tomato Sauce
  • 2 cups Beef Broth
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • Optional toppings: Shredded Cheddar Cheese, Sour Cream, Chopped Green Onions, Cilantro, Lime Wedges

Cooking Instructions

  • Sear the Beef: Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef cubes in batches, searing until browned. Remove and set aside.
  • Sauté the Vegetables: Add the chopped onion and green bell peppers to the pot. Cook until softened, about 5-7 minutes. If using jalapeño, add it here.
  • Add the Garlic and Spices: Stir in the minced garlic, cooking for another minute. Then add chili powder, cumin, smoked paprika, oregano, cayenne, and cinnamon. Stir and cook for a minute.
  • Combine Ingredients: Return the seared beef to the pot. Add crushed tomatoes, tomato sauce, beef broth, apple cider vinegar, and brown sugar. Stir well to combine.
  • Season and Simmer: Season with salt and pepper. Bring to a simmer, cover, and reduce heat to low. Let simmer for at least 3 hours, stirring occasionally.
  • Adjust Seasoning: After at least 3 hours, taste and adjust seasoning as needed.
  • Serve: Ladle into bowls and add your favorite toppings.
  • Enjoy: Pair with cornbread, crackers, or tortilla chips for a complete meal.

Notes

Chili tastes even better the next day. Consider making it in advance.
