  • Toast the slices of whole wheat bread in a toaster or skillet until golden brown, about 2-3 minutes per side.
  • Slice the tomatoes into ¼-inch thick rounds and arrange them on a plate.
  • Spread the herby cream cheese mixture generously on one side of each slice of toast.
  • Layer the tomato slices on one piece of toast, allowing them to overlap slightly.
  • Top with the second slice of toast, spread side down, and press gently to lock in the layers.
  • Slice the sandwich diagonally before serving and enjoy immediately with optional sides.
