Method
Begin by slicing the chicken into thin strips and chopping your choice of vegetables. Boil your selected noodles until al dente, then drain and set aside.
In a mixing bowl, combine the chicken strips, soy sauce, honey, and minced garlic. Allow the chicken to marinate for 15 to 30 minutes.
In a separate bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, cornstarch, and a bit of water or broth until smooth.
Heat oil in a wok or a large skillet over medium-high heat. Sear the marinated chicken until golden brown, approximately 4 to 5 minutes.
In the same pan, sauté your chopped vegetables for 2 to 3 minutes until they're crisp-tender and bright in color.
Return the cooked chicken to the pan, add the noodles, and gradually pour in your prepared sauce. Toss gently and cook for an additional 1 to 2 minutes.
