- 2 pounds beef chuck, cut into 1-inch cubes
- 1 cup pearl onions, peeled
- 4 cups carrots, sliced
- 3 cups potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour (optional, for thickening)
- Fresh parsley for garnish (optional)
In a large bowl, season the beef cubes with salt and pepper. Optionally, you can toss them in flour for a thicker stew.
Heat olive oil in a skillet over medium-high heat. Add the beef cubes in batches, searing them until browned on all sides.
Once seared, transfer the beef to the slow cooker.
Layer in the pearl onions, carrots, and potatoes on top of the beef.
In a separate bowl, combine the beef broth, Worcestershire sauce, garlic, and thyme. Pour this mixture over the beef and vegetables.
Cover the slow cooker and set it to cook on low for 8 hours or high for 4 hours.
About 30 minutes before serving, check the stew for seasoning and adjust if necessary. If you want a thicker stew, mix a tablespoon of flour with a little water and stir it in.
Once the stew is cooked, serve it hot, garnished with fresh parsley if desired.
