Ingredients
  

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 cup pearl onions, peeled
  • 4 cups carrots, sliced
  • 3 cups potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley for garnish (optional)

Instructions
 

  • In a large bowl, season the beef cubes with salt and pepper. Optionally, you can toss them in flour for a thicker stew.
  • Heat olive oil in a skillet over medium-high heat. Add the beef cubes in batches, searing them until browned on all sides.
  • Once seared, transfer the beef to the slow cooker.
  • Layer in the pearl onions, carrots, and potatoes on top of the beef.
  • In a separate bowl, combine the beef broth, Worcestershire sauce, garlic, and thyme. Pour this mixture over the beef and vegetables.
  • Cover the slow cooker and set it to cook on low for 8 hours or high for 4 hours.
  • About 30 minutes before serving, check the stew for seasoning and adjust if necessary. If you want a thicker stew, mix a tablespoon of flour with a little water and stir it in.
  • Once the stew is cooked, serve it hot, garnished with fresh parsley if desired.
