Ingredients
  

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup sliced mushrooms
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon cornstarch optional, for thickening
  • 2 tablespoons water optional, for thickening

Instructions
 

  • Trim excess fat from the beef chuck roast and cut it into 2-inch pieces.
  • In a large skillet over medium-high heat, add olive oil. Sear the beef pieces until browned on all sides, about 5-7 minutes.
  • Transfer the seared beef to the slow cooker. In the same skillet, add chopped onion and garlic, sautéing until fragrant and slightly softened, about 3 minutes.
  • Add the sautéed onion and garlic to the slow cooker with the beef. Pour in the beef broth, Worcestershire sauce, sliced mushrooms, thyme, rosemary, and season with salt and pepper.
  • Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the beef is tender and easily shreds with a fork.
  • If you prefer a thicker gravy, mix cornstarch with water in a small bowl. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
  • Check the seasoning and adjust with more salt or pepper if needed before serving.
