Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice
  • 1 piece zest of orange
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • fresh parsley for garnish

Instructions
 

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium heat.
  • Add the seasoned chicken breasts to the skillet. Cook for 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the cranberries, orange juice, orange zest, honey (or maple syrup), Dijon mustard, and dried thyme. Stir to combine.
  • Let the mixture simmer for about 5 minutes until the cranberries soften and the sauce thickens slightly.
  • Place the cooked chicken back into the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through and coat the chicken in the sauce.
  • Remove from heat and garnish with fresh parsley before serving.
