  • 2 cups Broth or water for sauce
  • 2 tablespoons Cornstarch for thickening

Cooking Steps

  • Heat a splash of oil in a large pot over medium heat. Add the finely chopped onions and minced garlic, cooking until softened and fragrant, about 5 minutes.
  • Add the sliced okra to the pot. Stir occasionally, allowing it to cook for about 10 minutes until the slime is reduced and the color brightens.
  • Gently fold in the shrimp and cook, stirring often, until the shrimp turn pink and opaque, about 3 to 5 minutes.
  • Pour in the diced tomatoes (with their juices), along with spices and broth or water. Stir well and let the mixture simmer for about 45 minutes.
  • Ladle the Smothered Okra with Shrimp over cooked rice or serve alongside cornbread. Garnish with fresh herbs.
