- 3 cloves Garlic (minced) Fresh is preferred.

How to Make Shanghai Fried Noodles
Begin by marinating the sliced pork in soy sauce, minced garlic, and freshly grated ginger. Let it sit for at least 10 minutes.
Bring a pot of salted water to a boil. Add the thick noodles and cook until al dente, about 5-7 minutes. Drain the noodles and rinse them under cold water to stop the cooking.
In a large pan or wok, heat a bit of oil over high heat. Add the marinated pork and stir-fry for about 3-4 minutes, or until the pork is browned. Remove it from the pan and set it aside.
Back in the same pan, toss in the chopped cabbage, sliced mushrooms, and green onions. Stir-fry for 4-5 minutes until the veggies are tender but still crisp.
Return the cooked pork to the pan. Add in the drained noodles and splash in more soy sauce. Stir-fry for an additional 2-3 minutes until everything is well combined.
