  • 12 oz Thick Noodles (Chow mein or lo mein)

For the Protein

  • 1 lb Pork (sliced) Substitute with chicken or tofu if desired.

For the Vegetables

  • 2 cups Cabbage (chopped) Can substitute with bok choy or bell peppers.
  • 1 cup Mushrooms (sliced) Shiitake or button mushrooms work well.
  • 1 bunch Green Onions (sliced) Shallots can be used if green onions are unavailable.

For Flavoring

  • ¼ cup Soy Sauce Low-sodium recommended for a healthier option.
  • 3 cloves Garlic (minced) Fresh is preferred.
  • 1 tablespoon Ginger (grated) Freshly grated is best.

How to Make Shanghai Fried Noodles

  • Begin by marinating the sliced pork in soy sauce, minced garlic, and freshly grated ginger. Let it sit for at least 10 minutes.
  • Bring a pot of salted water to a boil. Add the thick noodles and cook until al dente, about 5-7 minutes. Drain the noodles and rinse them under cold water to stop the cooking.
  • In a large pan or wok, heat a bit of oil over high heat. Add the marinated pork and stir-fry for about 3-4 minutes, or until the pork is browned. Remove it from the pan and set it aside.
  • Back in the same pan, toss in the chopped cabbage, sliced mushrooms, and green onions. Stir-fry for 4-5 minutes until the veggies are tender but still crisp.
  • Return the cooked pork to the pan. Add in the drained noodles and splash in more soy sauce. Stir-fry for an additional 2-3 minutes until everything is well combined.
  • Serve your delicious Shanghai Fried Noodles hot, garnished with sliced green onions or a sprinkle of sesame seeds.
