- 2 scallions, thinly sliced
- 1 large egg, beaten to blend
- 14.75 oz. can salmon, drained
- ½ cup panko breadcrumbs
- ¼ cup mayonnaise
- 1 Tbsp. Dijon mustard
- 1 Tbsp. finely chopped fresh dill
- 1 Tbsp. fresh lemon juice , plus wedges for serving
- Kosher salt
- Freshly ground black pepper
- 2 Tbsp. extra-virgin olive oil , plus more as needed
- Baby spinach for serving (optional)
In a large bowl, combine scallions, egg, salmon, panko, mayonnaise, mustard, dill, and lemon juice; season with salt and pepper and mix until well incorporated. Form into 5 patties.
In a large skillet over medium heat, heat oil. Cook patties, turning occasionally, until golden brown and crispy, 3 to 4 minutes per side. Drain on paper towels.
Serve over spinach (if using) with lemon wedges alongside for squeezing over.
