Ingredients
  

  • 2 pounds Yukon Gold Potatoes You can peel or leave skins on.
  • 1 head Garlic Roasted for added sweetness.
  • 1 cup Mascarpone Cheese Soft Italian cream cheese.
  • ½ cup whole cow’s milk Or lighter/plant-based milk.
  • ¼ cup fresh chives Chopped for garnish.
  • 1 teaspoon fine sea salt Adjust according to taste.

Instructions
 

Roasting Garlic

  • Preheat oven to 400ºF.
  • Trim the top ¼ inch off the top of each garlic bulb.
  • Place the garlic cut-side up on a piece of foil, drizzle with olive oil, and sprinkle with salt.
  • Wrap the garlic in the foil and roast for 45 to 60 minutes, until deeply golden brown and tender.

Boiling Potatoes

  • Cut the potatoes into evenly-sized chunks, about 1 to 2 inches thick.
  • Transfer potatoes to a large stockpot full of cold water, and season generously with salt.
  • Bring the water to a boil. Boil the potatoes for 15 to 20 minutes, until easily pierced with a knife.
  • Drain potatoes in a colander.

Preparing Mascarpone Mixture

  • Once the garlic bulbs are cool enough, squeeze the cloves out of the skin.
  • In a small saucepan, combine garlic cloves, mascarpone cheese, milk, and remaining salt.
  • Heat over medium, whisking to combine, until warm (do not boil).

Mashing Potatoes

  • Thoroughly mash the potatoes using your preferred method.
  • Return the mashed potatoes to the stockpot.

Combining Ingredients

  • Pour the milk mixture over the mashed potatoes and stir well to combine.
  • Season with extra salt if needed, garnish with chopped chives or thyme, and black pepper.

Notes

Roast garlic up to 2 days ahead and store in an airtight container. Leftover mashed potatoes can be refrigerated for up to 4 days.
