Cherries

  • 2 cups cherries, halved and pitted
  • Sugar for sprinkling cherries

Brownie Batter

  • 1 ⅓ cup white granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 5 tablespoon unsalted butter, melted
  • cup oil (canola or vegetable)
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ¾ cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Preparation

  • Roast halved cherries with a light sprinkle of sugar at high heat until softened and juicy, then let cool.
  • Lower oven temperature and prepare an 8×8 pan with parchment and nonstick spray.
  • Whisk together flour, cocoa powder, cornstarch, and salt in a separate bowl.
  • Beat sugar, eggs, and egg yolk at high speed for several minutes until thick and pale.
  • Mix in melted but slightly cooled butter, oil, and vanilla on low speed.
  • Gently fold dry ingredients into the wet mixture to keep air in the batter.
  • Fold in chocolate chips and half of the roasted cherries.
  • Spread batter evenly in prepared pan.
  • Bake until edges are set but center remains slightly underbaked.
  • Cool completely in the pan, then briefly chill to firm up.
  • Remove, top with remaining cherries, slice, and serve.

Notes

Roasting cherries enhances sweetness and intensifies flavor. Do not overmix batter to maintain a light, fudgy texture. Brownies should be slightly underbaked in the center for best consistency. Cooling and brief chilling help achieve clean cuts. Use Dutch process cocoa for a richer chocolate taste.
