Roast Beef Sandwich Ingredients

  • 2.5 pounds beef top sirloin roast
  • 2 tablespoons olive oil for rubbing roast

  • 2 teaspoons granulated onion
  • 2 teaspoons granulated garlic
  • 2 medium white onions halved and sliced thinly (optional)
  • 6 buns onion buns toasted
  • to taste prepared horseradish optional spread for buns

Creamy Cheddar Sauce Ingredients

  • 0.75 ounce butter about 1 ½ tablespoons
  • 0.75 ounce flour about 3 scant tablespoons
  • 1.5 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 0.25 teaspoon granulated onion
  • 0.25 teaspoon ground mustard powder
  • 0.25 teaspoon paprika
  • 0.25 teaspoon salt slightly heaping

Preparation Steps

  • Gather and prep all of your roast beef sandwich ingredients.
  • Preheat your oven to 325°, line a baking sheet with foil, and top with a wire rack.
  • Rub the beef with olive oil, salt, black pepper, granulated onion and garlic.
  • Place the beef on the wire rack and insert a digital thermometer. Roast for 1 hour 15 minutes until internal temperature is 125° to 135°.
  • Set beef aside to rest for 15 minutes before slicing thinly.
  • For caramelized onions, heat oil in a skillet, add onions, salt, and pepper, and sauté for 15 to 20 minutes.
  • Gather and prep the creamy cheddar sauce ingredients.
  • Melt butter in a small pot, stir in flour and cook for 1 minute. Whisk in milk until smooth; cook for 5 to 10 minutes until thick.
  • Whisk in cheddar cheese until smooth, then add granulated onion, ground mustard, paprika, and salt.
  • Assemble the sandwich with a toasted onion bun, horseradish, sliced roast beef, cheddar sauce, and caramelized onions if using.

Notes

For optimal flavor, let the beef rest before slicing and serve immediately after assembling the sandwich for best taste.
