  • 1 cup red lentils
  • 2 medium sweet potatoes peeled and diced
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon olive oil for cooking

Cooking Instructions

  • Heat olive oil in a pot and sauté garlic and ginger until fragrant.
  • Add sweet potatoes, curry powder, and turmeric; stir for 2-3 minutes.

  • Add red lentils and coconut milk; reduce heat and simmer for 20-25 minutes.
  • Season with salt and pepper to taste. Serve hot.
