Cookies and Filling

  • 12 pieces peanut butter cookies
  • 6 Tablespoons jam or fruit puree
  • 2 cups strawberry or vanilla ice cream

Instructions
 

Preparation

  • Spread a tablespoon of jam or fruit puree on the bottom of 6 of the cookies. Place in the freezer for about 20 minutes.
  • Remove from the freezer and place a scoop of ice cream on top of the jam. Top with another cookie and freeze for 20 minutes.

Notes

You can enjoy these cookies as soon as you put the ice cream on for a slightly softer bite. These cookies can also be stored in an air-tight container in the freezer for up to a week.
