Ingredients
  

  • 4 cups all-purpose flour or bread flour Use a digital scale for precise measurement.
  • 2 to 3 teaspoons kosher salt Use 10 grams for low sodium; 12-15 grams otherwise.
  • 2 teaspoons instant yeast Alternative: use active-dry yeast (see notes).
  • 2 cups lukewarm water Mix ½ cup boiling water with 1 ½ cups cold water.
  • butter For greasing the pan.
  • 4 tablespoons olive oil Divided for greasing and dimpling.
  • flaky sea salt Such as Maldon for sprinkling on top.
  • 1 to 2 teaspoons whole rosemary leaves Optional for flavor.

Main Steps

  • In a large bowl, whisk together the flour, salt, and instant yeast. Add the water and mix until a sticky dough ball forms. Cover and let rest for 30 minutes. Stretch and fold the dough if desired.
  • Lightly coat the surface of the dough with olive oil and cover. Refrigerate for at least 12 hours.
  • Prepare baking pans with parchment paper or greasing. Pour oil into the center of each pan.
  • Deflate the dough and turn it into rough balls. Place them in the prepared pans and let rest for 3 to 4 hours.
  • Preheat oven to 425°F. Optionally sprinkle rosemary and pour oil over the dough. Dimple the dough and sprinkle with sea salt.
  • Bake for 25 to 30 minutes until golden. Cool for 10 minutes before serving.
  • Store in an airtight container at room temperature or freeze for later use.

Notes

For best results, use a digital scale for measuring flour and water. Adjust the salt according to dietary needs and use proper greasing methods to prevent sticking.
