- 1 cup Honey Can substitute with maple syrup.
- 2 tablespoons Chipotle Chili Powder Adjust based on spice preference.
- 2 tablespoons Olive Oil Avocado oil also works.
- 1 teaspoon Garlic Powder Fresh minced garlic can be used.
- 1 teaspoon Salt Adjust as per taste.
- 1 teaspoon Black Pepper Freshly cracked recommended.
Smoked Gouda Mashed Potatoes
- 2 pounds Russet Potatoes Yields a fluffy texture.
- ½ cup Milk Non-dairy milk can be used.
- 1 cup Smoked Gouda Cheese Cheddar can be used as an alternative.
- 4 tablespoons Unsalted Butter Use salted butter if preferred.
Preparation
Preheat oven to 400°F (200°C).
In a large bowl, whisk together honey, chipotle chili powder, olive oil, garlic powder, salt, and pepper. Marinate chicken thighs for at least 15 minutes.
Boil salted water in a pot. Add russet potatoes and cook until fork-tender, about 15-20 minutes. Drain well.
Return potatoes to pot. Mix in milk, butter, and smoked gouda. Mash until creamy and smooth.
Arrange marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
Serve chicken thighs with creamy smoked gouda mashed potatoes. Drizzle with pan juices if desired.
