Equipment

  • roasting pan
  • whisk
  • resealable plastic bag

Ingredients

Marinade Ingredients

  • ¼ cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Pork

  • 2 lb pork loin roast

Instructions

Preparation

  • In a small bowl, whisk together olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, rosemary, thyme, black pepper, and salt.
  • Place the pork loin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
  • Preheat your oven to 375°F (190°C).
  • Remove the pork from the marinade and place it in a roasting pan. Discard the remaining marinade.
  • Roast the pork in the preheated oven for 45-60 minutes, or until the internal temperature reaches 145°F (63°C).
  • Let the pork rest for 10 minutes before slicing. Serve and enjoy!

Notes

For a different flavor profile, try adding a tablespoon of balsamic vinegar to the marinade. For spice, include a teaspoon of crushed red pepper flakes. Experiment with fresh herbs for a vibrant taste.
