Ingredients
  

Earl Grey Rolls

  • 1 ¼ cups whole milk warmed to about 110 ℉ (43 ℃)
  • 2 ¼ teaspoon active dry yeast
  • 1 teaspoon granulated white sugar to bloom the yeast
  • 3 tablespoon loose leaf Earl Grey tea
  • 4 ¾ cups all-purpose flour spooned and leveled
  • 1 ½ teaspoon salt
  • 2 tablespoon granulated white sugar
  • 2 units eggs whisked
  • 1 tablespoon vanilla bean paste
  • ½ cup unsalted butter very softened

Earl Grey Filling

  • 3 tablespoon loose leaf Earl Grey tea
  • ½ cup unsalted butter very softened
  • ½ cup brown sugar
  • ½ cup granulated white sugar
  • 1 tablespoon vanilla bean paste
  • 2 tablespoon honey
  • ¼ teaspoon salt
  • ¼ cup heavy cream for pouring in between the rolls

Lavender Cream Cheese Frosting

  • ½ tablespoon culinary lavender
  • 6 tablespoon unsalted butter very softened
  • 6 oz cream cheese cold
  • ¾ cup powdered sugar
  • ½ tablespoon vanilla bean paste
  • purple food coloring optional

Instructions
 

For the Earl Grey Rolls

  • Bloom the yeast by mixing active dry yeast, sugar, and warm milk together. Let sit for 10 minutes until foamy.
  • Grind the Earl Grey tea in a food processor or spice grinder and pass through a sieve.
  • Mix flour, salt, sugar, and finely ground Earl Grey tea together in a large bowl.
  • Add whisked eggs, vanilla, and softened butter to the dry ingredients and mix.
  • Add the yeast mixture and blend, then knead on medium speed for 7-10 minutes until the dough forms a ball.
  • Form the dough into a ball, place in a greased bowl, cover, and let rise for 1-1.5 hours until doubled.

For the Earl Grey Filling

  • Grind remaining Earl Grey tea and mix with ground sugar, butter, honey, salt, and vanilla until smooth.

Assembling and Baking the Rolls

  • Grease a 9×13" casserole dish.
  • Punch the dough, remove from bowl, and roll out to an 18x12 inch rectangle.
  • Spread Earl Grey filling over the dough and roll up tightly.
  • Cut into 12 rolls, place in the greased dish, and pour heavy cream between each roll.
  • Cover the rolls and let them proof for about an hour until doubled.
  • Preheat oven to 350 ℉ (175 ℃) 15 minutes before baking.
  • Bake for 22-25 minutes until light golden.

For the Lavender Cream Cheese Frosting

  • Grind the lavender in a food processor.
  • Mix softened butter and cream cheese until fluffy.
  • Add powdered sugar, vanilla, and ground lavender, mix until combined.
  • Add optional food coloring and mix until light and fluffy.
  • Cover warm rolls with frosting after they cool for 5 minutes.

Notes

Allow the rolls to cool slightly before frosting for the best results.
