Ingredients
  

Graham Cracker Crust

  • 1.25 cups crushed graham cracker crumbs
  • 0.25 cups granulated sugar
  • 5 tablespoons unsalted butter melted & slightly cooled

Lemon Cheesecake Filling

  • 16 ounces brick-style cream cheese softened to room temperature
  • 0.25 cups full-fat sour cream or plain Greek yogurt
  • 0.67 cups granulated sugar
  • 0.5 teaspoon pure vanilla extract
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon freshly grated lemon zest about 1 medium lemon
  • 2 large eggs at room temperature

Instructions
 

Graham Cracker Crust

  • Preheat the oven to 325°F (163°C).
  • Line an 8-inch square pan with parchment paper or aluminum foil, leaving some overhang for easy removal.
  • In a large mixing bowl, combine the crushed graham cracker crumbs and granulated sugar; stir well.
  • Add the melted butter and mix until all crumbs are moistened.
  • Scoop the mixture into the prepared pan and firmly press it down into an even layer.
  • Bake for 10 minutes; remove and set aside to cool slightly.

Lemon Cheesecake Filling

  • In a mixing bowl, beat the cream cheese and sour cream on low-medium speed until smooth.
  • Add the granulated sugar and vanilla extract, mixing until well combined.
  • Mix in the lemon juice and lemon zest until fully combined.
  • In a separate bowl, lightly beat the eggs. Pour them into the cheesecake mixture and mix on low speed until just combined.
  • Pour the cheesecake filling on top of the graham cracker crust and smooth it out.
  • Bake for 35 to 40 minutes or until the filling is set around the edges.
  • Remove and cool completely on a wire rack for about 2 hours.
  • Chill in the fridge for at least 4 to 5 hours until firm.
  • Lift the bars out using the parchment paper, slice, and enjoy!

Notes

Bars may be stored in an airtight container in the fridge for up to 5 days. Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge.
