  • 2 cups kale, chopped stems removed
  • 1 cup fresh basil leaves
  • ¼ cup pine nuts
  • 2 cloves garlic, minced
  • ¼ cup Parmesan cheese, grated
  • ½ cup olive oil
  • Salt and pepper to taste

Pizza Assembly

  • 1 each pizza crust store-bought or homemade
  • 1 cup mozzarella cheese, shredded
  • Optional toppings cherry tomatoes, olives, or feta cheese

Preparation Steps

  • Preheat your oven to 475°F (245°C).
  • In a food processor, combine kale, basil, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped.
  • With the processor running, slowly drizzle in olive oil until the mixture is smooth. Season with salt and pepper to taste.
  • Roll out your pizza crust on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet.
  • Evenly spread the kale pesto over the pizza crust, leaving a small border around the edges.
  • Sprinkle the shredded mozzarella cheese evenly over the pesto.
  • If desired, scatter cherry tomatoes or olives on top of the cheese.
  • Place the pizza in the preheated oven and bake for 15-20 minutes, or until the crust is golden and the cheese is bubbling.
  • Remove the pizza from the oven and let it cool for a few minutes. Slice into wedges.
  • Optionally, garnish with additional basil or a sprinkle of Parmesan cheese before serving.
