Instructions
 

For the Marinade

  • Combine honey, Dijon mustard, olive oil, minced garlic, apple cider vinegar, salt, and pepper in a bowl until the mixture is smooth and glossy.
  • Marinate chicken thighs in the honey mustard blend, flipping to coat evenly; cover and refrigerate for at least 30 minutes, or up to 2 hours.

Cooking the Chicken

  • Preheat oven to 400°F (200°C) and line a baking sheet with foil; brush lightly with oil to prevent the skin from sticking.
  • Arrange chicken thighs skin-side up on the prepared sheet, spacing them about 1 inch apart.
  • Bake for 30–35 minutes, or until the skin turns golden brown and an instant-read thermometer reads 165°F in the thickest part.
  • Rest the chicken for 5 minutes on a warm plate.
