Ingredients
  

  • 2 slices sourdough bread squishy
  • ½ whole avocado ripe, mashed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 5 oz deli turkey or chicken thinly sliced
  • 1 handful salt & vinegar potato chips
  • 2-3 slices heirloom tomato
  • 1 handful micro greens or lettuce

Instructions
 

  • Spread the smashed avocado on one slice of bread. To the other slice, spread a thin layer of mustard and a drizzle of honey.
  • Add the turkey, potato chips, tomatoes and a handful of microgreens. Close the sandwich, slice and enjoy!

Notes

This sandwich tastes best with squishy, fresh bread. If my bread is even a little stale, I like to wrap the slices in a damp paper towel and zap them in the microwave for 10-15 seconds or until they soften.
