Potatoes

  • 1.5 lbs baby or fingerling potatoes

Sauce

  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 3 tablespoons dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • Kosher salt to taste
  • freshly ground black pepper to taste

Garnish

  • 1 tablespoon fresh chives, chopped

Preparation Steps

  • Preheat oven to 425°F and grease a rimmed baking sheet with nonstick spray.
  • In a large bowl, whisk together olive oil, honey, dijon mustard, garlic powder, onion powder, thyme, paprika, salt, and pepper. Add potatoes and toss to coat.
  • Spread potatoes out evenly on baking sheet, drizzling with any extra sauce. Bake until fork tender and golden brown, turning once halfway through, about 30 minutes.
  • Sprinkle with chives and additional salt and serve. Enjoy!
