Ingredients
  

Marinade

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons soy sauce (or tamari)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 2 cloves garlic minced
  • ½ teaspoon black pepper

Mushrooms

  • 4 large portobello mushrooms
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Clean the caps of the mushrooms using a damp paper towel.
  • Remove the stems carefully and optional scrape out gills.

Mix Marinade

  • In a bowl, whisk together olive oil, balsamic vinegar, soy sauce, minced garlic, smoked paprika, black pepper, and Dijon mustard.

Soak Mushrooms

  • Place cleaned mushroom caps in a shallow dish and pour the marinade over them.
  • Let them marinate for at least 15-20 minutes at room temperature.
  • Option to refrigerate for an hour for deeper flavor.

Cooking

  • Heat a cast-iron skillet over medium-high heat until hot.
  • Add a small drizzle of oil to the pan, then add marinated mushrooms cap-side down.
  • Sear for 4-5 minutes until dark brown, then flip to gill side.
  • Baste tops with leftover marinade while cooking for another 4 minutes.
  • Optional: add a knob of butter for extra juiciness last minute.

Rest

  • Transfer cooked mushrooms to a plate and let them rest for 3-5 minutes.
  • Sprinkle with fresh chopped parsley before serving.

Serving

  • Serve portobello steaks whole or sliced with sides as desired.

Notes

Ensure mushrooms are dry before marinating for a crispy exterior. Adjust soy sauce for low sodium options.
