Preparation

  • Preheat your oven to 200°C (400°F) to ensure it is hot and ready for roasting the potatoes and peppers.
  • In a large bowl, toss the peeled and cubed potatoes along with the chopped red bell pepper with salt, olive oil, and the juice of ¼ lemon to evenly coat the vegetables with flavor.
  • Spread the coated potatoes and peppers evenly on a greased baking tray and place it in the preheated oven. Roast for 25 minutes to begin cooking the potatoes and soften the peppers.
  • Meanwhile, mix together garlic powder, onion powder, paprika, oregano, cinnamon, and ground pepper to create the spice blend. After the initial roasting, sprinkle this spice mix evenly over the potatoes and peppers, then stir gently to ensure all pieces are coated.
  • Return the baking tray to the oven and roast for an additional 10-15 minutes. This final roasting step crisps up the potatoes and deepens the flavors.
  • Once out of the oven, drizzle the dish with the remaining juice of ¼ lemon for a fresh tang. Top with crumbled feta cheese and chopped parsley to add creaminess and herbal brightness. Serve warm.

Notes

You can adjust the spices to suit your taste, adding more paprika for smokiness or extra oregano for a stronger herbal note. If preferred, red onions can be added along with the peppers for additional flavor complexity. Use fresh lemon juice for the best citrus flavor. This dish pairs wonderfully with grilled meats or as part of a Mediterranean mezze. For a crispier texture, make sure the potatoes are cut into uniform small cubes to ensure even roasting.
