Ingredients
  

Crust

  • 2 cups gingerbread cookies crushed
  • 6 tablespoon unsalted butter melted

Filling

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup heavy cream
  • ¼ cup molasses
  • 2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 2 teaspoon vanilla extract

Preparation

  • Preheat oven to 325°F. Prepare crust by combining crushed cookies with butter and pressing into a springform pan. Bake for 10 minutes.
  • Beat cream cheese and sugars until smooth. Add eggs one at a time, then mix in remaining ingredients.
  • Pour filling over crust. Bake in a water bath for 60–70 minutes. Cool in the oven for 1 hour.
  • Chill for at least 4 hours, garnish, and serve.

Notes

For best results, chill overnight before serving.
