- 8 ounces linguine pasta
- 1 pound large shrimp, peeled and deveined
- 6 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup low-sodium chicken broth
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons unsalted butter
- red pepper flakes Optional for heat
Cook the linguine in salted boiling water until al dente. Drain and set aside.
In a skillet, heat olive oil over medium-high heat. Season shrimp with salt and pepper; cook for 2-3 minutes per side until pink. Remove from skillet.
In the same skillet, sauté minced garlic and optional red pepper flakes for about 30 seconds.
Add cherry tomatoes; cook for another 2-3 minutes until softened.
Pour in chicken broth and lemon juice; simmer briefly before adding butter until melted.
Return shrimp to skillet, add drained linguine, toss to combine, and serve garnished with fresh parsley.
