  • 1 Pizza dough (store-bought or homemade)
  • 1 tablespoon butter or neutral oil
  • 4 small yellow onions, thinly sliced or 3 medium onions
  • 2-3 drops Worcestershire sauce
  • ¼ teaspoon balsamic vinegar
  • 2-3 sprigs fresh thyme or a pinch if using dried
  • ¼ cup water
  • ¼ cup vegetable or beef stock
  • ½ cup gruyère cheese, shredded can substitute Fontina, Comte, or Swiss cheese
  • 1 cup mozzarella cheese, shredded

Preparation

  • Prepare your favorite pizza dough and preheat your oven according to your pizza dough’s directions.
  • In a skillet, heat butter or oil over medium heat. Add onions and thyme, sautéing until the onions start to soften. Add water, Worcestershire sauce, and balsamic vinegar, stirring until the water evaporates. Repeat with the stock until onions are jammy and browned.
  • Top the pizza with half the cheeses, layer the caramelized onions, then sprinkle the remaining cheese on top.
  • Bake the pizza according to your dough’s directions.
  • Remove from the oven, slice, and sprinkle with thyme before serving.

Notes

Using King Arthur Baking Company’s pizza crust is recommended for best results. No added salt to onions as cheese provides sufficient seasoning.
