Salad Ingredients

  • 1 medium head Napa cabbage shredded thin
  • 4 pieces green onions sliced on a diagonal
  • ½ cup sliced almonds or sunflower seeds
  • 2 tablespoons sesame seeds
  • ½ cup vegetable oil or avocado oil
  • ¼ cup rice vinegar
  • 3 tablespoons granulated sugar
  • 2 tablespoons soy sauce
  • ½ teaspoon toasted sesame oil
  • ½ teaspoon black pepper
  • 1 package instant ramen noodles dry, crushed

Preparation

  • Clean the Napa cabbage and slice it into thin ribbons.
  • Wash the shredded cabbage and dry it in a salad spinner.
  • Toast the sliced almonds or sunflower seeds and sesame seeds in a skillet until golden brown.
  • Crush the instant ramen noodles into small chunks.
  • Combine all dressing ingredients in a glass jar and shake until emulsified.
  • In a large mixing bowl, combine shredded cabbage and sliced green onions, then pour dressing over them and toss.

Notes

This salad is best served fresh but the dressing can be made in advance and stored in the fridge.
