Ingredients
  

Chicken and Vegetables

  • 1 lb boneless, skinless chicken breast cut into 1 inch cubes
  • salt to taste
  • pepper to taste
  • 2 tablespoon olive oil divided
  • 2 cups broccoli florets
  • ½ 1 yellow bell pepper cut into 1 inch pieces
  • ½ 1 red bell pepper cut into 1 inch pieces

Stir Fry Sauce

  • 1 tablespoon corn starch
  • 2 tablespoon cold water
  • ¼ cup low sodium chicken broth
  • 3 tablespoon low sodium soy sauce

Instructions
 

Prepare Stir Fry Sauce

  • In a medium size bowl, whisk together corn starch and water. Add remaining ingredients and whisk to combine. Set aside.

Cook Chicken and Vegetables

  • Add one tablespoon of olive oil to a large skillet or wok and heat over medium high heat.
