Ingredients
  

  • 2.5 pounds small green cabbage (shredded)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4-5 small cucumbers (or 1 English cucumber)
  • 1 medium carrot (grated)
  • 1 small onion
  • 0.5 cup dill (chopped) about a handful
  • 3 tablespoon olive oil
  • 2 tablespoon white vinegar

Instructions
 

  • Place the shredded cabbage in a large bowl. Add the sugar and salt.
  • Massage the cabbage with your hands for about 1 minute, until it begins releasing its juices and softens.
  • Add the remaining ingredients — cucumber, carrot, onion, dill, white vinegar, and olive oil. Toss everything together until well combined.
  • Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld before serving.

Notes

Variations include adding red onion, bell pepper, or radish. Great with grilled meats or as a light meal by adding protein like chickpeas or chicken. Store in an airtight container for up to 3-4 days.
