Ingredients
  

Ladyfinger Base

  • 24 pieces Ladyfingers (savoiardi) Substitute with homemade sponge cake if needed.
  • 1 cup Brewed Coffee (cooled) Opt for milk if you prefer a non-coffee version.
  • ¼ cup Coffee Liqueur Optional; omit for a non-alcoholic version.

Mousse

  • 2 cups Heavy Cream Ensure it’s well-chilled before whipping.
  • ½ cup Granulated Sugar Adjust based on your taste.
  • 1 tablespoon Vanilla Extract For best results, use pure vanilla.
  • 1 tablespoon Gelatin Powder Bloom it in water before dissolving.

Berries

  • 2 cups Mixed Berries (strawberries, blueberries, raspberries) Adjust sugar according to the berries' natural sweetness.
  • 1 tablespoon Lemon Juice Freshly squeezed is preferred.

Preparation Steps

  • In a bowl, gently mix the berries with sugar (if using) and a splash of lemon juice. Set aside.
  • In a small bowl, sprinkle gelatin over water and let it sit for about 5 minutes.
  • Carefully heat the bloomed gelatin until it fully dissolves, then let it cool slightly.
  • In a mixing bowl, whip the heavy cream and granulated sugar together until soft peaks form, then add vanilla extract.
  • Carefully stir the dissolved gelatin into the whipped cream mixture.
  • Line a 9-inch springform pan with parchment paper.
  • Dip the ladyfingers in the coffee mixture or milk and arrange them upright around the sides of the pan.
  • Pour half of the mousse into the pan over the ladyfingers, spread evenly, then add the macerated berries followed by the remaining mousse.
  • Cover the pan and refrigerate for 4-6 hours or until set.
  • Carefully remove from the pan, garnish with additional berries and powdered sugar, then slice and serve.
