Ingredients
  

For the Salmon

  • 4 fillets Salmon Rich in omega-3 fatty acids

For the Chickpeas

  • 1 can Chickpeas Roasted for crunch
  • 2 tablespoons Olive oil For roasting
  • 1 teaspoon Smoked paprika For flavor
  • 1 teaspoon Garlic powder Enhances flavor
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

For the Bowl

  • 1 cup Pesto Store-bought or homemade
  • 2 cups Cooked quinoa or rice Optional
  • 2 cups Mixed greens Fresh spinach or arugula
  • 2 tablespoons Lemon juice For zest
  • 2 tablespoons Fresh parsley For garnish

Instructions
 

Cooking Instructions

  • Preheat the oven to 400°F (200°C).
  • Toss the chickpeas in a bowl with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them evenly on a baking sheet.
  • Roast the chickpeas for 20-25 minutes, shaking the pan halfway through.
  • Heat a skillet over medium-high heat and cook the salmon fillets for about 4-5 minutes per side.
  • Set aside the salmon once cooked and let it rest for a few minutes.
  • Layer quinoa or rice, mixed greens, roasted chickpeas, and salmon fillets in a large bowl.
  • Drizzle pesto sauce over the top, followed by lemon juice and fresh parsley.
  • Serve immediately and enjoy!
