  • 1 lb Salmon Fillet Fresh or canned
  • ¼ cup Neutral Oil Grapeseed, Canola, or Avocado for frying
  • 1 teaspoon Kosher Salt Adjust to taste
  • ½ teaspoon Black Pepper Freshly ground works best
  • 2 tablespoon Unsalted Butter For sautéing shallots
  • 1 medium Shallot Finely chopped
  • 2 cloves Garlic Chopped
  • 1 cup Leftover Mashed Potatoes Or freshly cooked
  • 1 cup Seasoned Breadcrumbs Panko for extra crunch
  • 1 tablespoon Old Bay Seasoning Optional
  • 1 tablespoon Dijon Mustard Optional
  • ¼ cup Fresh Parsley For garnish

For the Remoulade Sauce

  • ½ cup Mayonnaise Can substitute with yogurt
  • 1 tablespoon Dijon Mustard Adds zest
  • 1 tablespoon Capers Or chopped pickles
  • 2 tablespoon Fresh Herbs Like Dill or Parsley
  • 1 tablespoon Lemon Juice Freshly squeezed is best

Preparation Steps

  • Prepare Remoulade Sauce: If you haven’t made it yet, whip up the remoulade sauce according to your recipe.
  • Cook Salmon: Preheat your oven to 375°F. Place your salmon on a lined baking sheet, drizzle with oil, season, and bake for 15-20 minutes until it reaches an internal temperature of 130°F.
  • Sauté Shallots: Melt butter in a small pan over medium-low heat, add shallots, and cook until translucent, about 3 minutes. Stir in garlic for another minute.
  • Combine Ingredients: In the bowl with flaked salmon, mix in mashed potatoes, breadcrumbs, sautéed shallots, Old Bay seasoning, and Dijon mustard.
  • Form Croquettes: Shape mixture into oval patties, using about 3 tablespoons of the mixture for each.
  • Pan Fry: Heat oil to about 375°F, fry croquettes for 2-3 minutes on each side until golden brown, draining on paper towels.
  • Serve: Arrange croquettes on a serving plate, sprinkle with chopped parsley, and serve with remoulade sauce.
