  • 1 large Egg or flax egg for vegan option
  • 1 cup Sharp Cheddar Cheese or dairy-free cheese
  • ¼ cup Parmesan Cheese optional
  • 1 teaspoon Kosher Salt adjust to taste
  • ½ teaspoon Ground Black Pepper or white pepper
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder or sautéed fresh onions
  • 1 teaspoon Smoked Paprika or regular paprika or cayenne

  • 1 can Non-stick Cooking Spray or parchment paper for cleanup

Preparation

  • Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with non-stick spray or parchment paper for easier cleanup.
  • Microwave Cauliflower: Place the riced cauliflower in a microwave-safe bowl and heat for 2 minutes. Allow it to cool slightly before handling.
  • Squeeze Moisture: Using a clean kitchen towel or cheesecloth, squeeze out as much moisture as possible from the cauliflower.
  • Combine Ingredients: In a mixing bowl, whisk together the egg, sharp cheddar, parmesan (if using), salt, pepper, garlic powder, onion powder, and smoked paprika until well mixed.
  • Add Cauliflower: Gently fold the squeezed cauliflower into the egg and cheese mixture. Stir until everything is evenly coated and combined.
  • Shape the Patties: Divide the mixture into 8 portions and shape them into patties about ½ inch thick.
  • Bake to Perfection: Bake the patties in the preheated oven for 15 minutes, flipping them halfway through.
  • Broil for Crispiness: Switch to the broiler setting and broil the hash browns for an additional 5 minutes.
