Ingredients
  

Meat

  • 500 g chicken thighs skinless boneless

Seasoning

  • ½ teaspoon salt
  • ½ teaspoon pepper

Soup Base

  • 30 g unsalted butter
  • 1 unit onion finely chopped
  • 2 cloves garlic minced
  • 2 stems celery finely sliced
  • ½ cup chardonnay or other dry white wine, optional
  • 4 cups chicken stock low sodium
  • 3 cups water
  • 1 teaspoon cooking salt
  • ½ teaspoon black pepper
  • 250 g small pasta shells or other small pasta, rice, potato etc
  • 1 cup parmesan finely grated or store bought pre-grated
  • 1 cup thickened cream
  • 2 cups baby spinach chopped
  • ½ cup sun dried tomato strips chopped into 1cm pieces

Thickener

  • 2 teaspoon cornflour mixed with 2 teaspoon water

Instructions
 

Cooking Steps

  • Sprinkle each side of the chicken with salt and pepper. Melt butter in a large pot over medium-high heat. Cook chicken for 3 minutes per side until light golden, then remove from pot.
  • Add garlic, onion, and celery to the pot and cook for 3 minutes until the onion is softened.
  • Increase heat, add wine, stir, and simmer until the wine reduces by half.
  • Add stock, water, salt, and pepper to the pot. Bring to a boil, then add the pasta and cook according to packet instructions (about 10 minutes).
  • Chop chicken into small pieces and add it back to the pot to finish cooking.
  • Once pasta is cooked, lower the heat, stir in parmesan until melted, then stir in cornflour-water mixture, cream, and spinach until combined and spinach is wilted.
  • Ladle soup into bowls and sprinkle with sun-dried tomatoes and a drizzle of oil if desired. Serve hot.
  • Store separately from pasta to prevent bloating. Refrigerate both and scoop out with a slotted spoon.

Notes

For best results, store pasta separately from the soup to prevent it from becoming bloated and soft. Can adjust ingredients for gluten-free options if desired.
