Ingredients
  

Bacon and Gnocchi

  • 2 slices bacon, chopped
  • 2 packages shelf-stable gnocchi 16 oz each

Sauce Ingredients

  • 2 tablespoon extra-virgin olive oil
  • 2 cups chopped onion
  • 4 cloves garlic, minced
  • 2 tablespoon chopped fresh thyme plus more for garnish
  • 1.5 cups reduced-fat milk
  • 3 oz reduced-fat cream cheese, softened
  • 1.5 cups unseasoned canned pumpkin
  • 0.5 teaspoon ground black pepper
  • 0.5 cup grated Parmesan cheese

Cooking Steps

  • In a large skillet over medium heat, cook bacon until crisp. Remove and set aside, leaving the drippings in the pan.
  • Add olive oil to the pan. Sauté gnocchi for 5–7 minutes until golden and slightly crisp. Remove and set aside.
  • In the same pan, add onions and cook until softened, about 5 minutes. Stir in garlic and thyme, cooking 1 minute more.
  • Add milk, cream cheese, pumpkin, and pepper. Whisk until smooth and creamy, about 3–4 minutes.
  • Return gnocchi and bacon to the pan. Toss to coat in sauce and heat through.
  • Stir in Parmesan cheese and adjust seasoning to taste.
  • Serve hot, garnished with extra thyme and more Parmesan if desired.
