Bacon and Gnocchi
- 2 slices bacon, chopped
- 2 packages shelf-stable gnocchi 16 oz each
Sauce Ingredients
- 2 tablespoon extra-virgin olive oil
- 2 cups chopped onion
- 4 cloves garlic, minced
- 2 tablespoon chopped fresh thyme plus more for garnish
- 1.5 cups reduced-fat milk
- 3 oz reduced-fat cream cheese, softened
- 1.5 cups unseasoned canned pumpkin
- 0.5 teaspoon ground black pepper
- 0.5 cup grated Parmesan cheese
Cooking Steps
In a large skillet over medium heat, cook bacon until crisp. Remove and set aside, leaving the drippings in the pan.
Add olive oil to the pan. Sauté gnocchi for 5–7 minutes until golden and slightly crisp. Remove and set aside.
In the same pan, add onions and cook until softened, about 5 minutes. Stir in garlic and thyme, cooking 1 minute more.
Add milk, cream cheese, pumpkin, and pepper. Whisk until smooth and creamy, about 3–4 minutes.
Return gnocchi and bacon to the pan. Toss to coat in sauce and heat through.
Stir in Parmesan cheese and adjust seasoning to taste.
Serve hot, garnished with extra thyme and more Parmesan if desired.
