For the Mashed Potatoes

  • 2 pounds Potatoes (Yukon Gold/Russet) Sweet potatoes for an interesting twist

For the Glazed Carrots

  • 2 cups Baby Carrots Substitute with green beans or peas

Preparation

  • Begin by boiling peeled and cubed potatoes in salted water for 15-20 minutes, until they're fork-tender. Drain and mash with butter and milk until smooth; keep warm on the stove.
  • In a separate saucepan, mix baby carrots with butter, brown sugar, salt, and a splash of water. Cover and simmer for 10-12 minutes until tender, uncovering for the last 2-3 minutes to thicken the glaze.
  • Season chicken with salt, pepper, garlic powder, thyme, and rosemary. In a large skillet, heat olive oil and butter over medium heat. Sear chicken for 4-5 minutes per side until golden brown; transfer to a plate.
  • In the same skillet, sauté minced garlic for 30 seconds until fragrant. Pour in chicken broth to deglaze the pan, then stir in heavy cream, parmesan cheese, and Dijon mustard. Simmer for 3-5 minutes until sauce thickens.
  • Return chicken to the skillet, nestling it in the creamy sauce. Spoon sauce over chicken and let simmer for an additional 2 minutes.
  • Plate mashed potatoes and glazed carrots alongside the chicken. Drizzle remaining cream sauce on top and garnish with freshly chopped parsley or chives.
