Cranberry Bread Ingredients

  • 1.5 cups all-purpose flour plus ½ tablespoon for cranberries
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 cups milk room temperature
  • 1 large orange zest divided
  • 0.25 cups orange juice freshly squeezed
  • 6 tablespoon unsalted butter softened
  • 0.75 cups granulated sugar
  • 2 large eggs room temperature
  • 1.5 cups fresh cranberries rinsed and patted dry

Orange Glaze Ingredients

  • 1 cup powdered sugar
  • 1.5 tablespoon orange juice or to reach desired consistency
  • 1 teaspoon orange zest reserved from the above orange

How to Make Cranberry Orange Bread

  • Preheat oven to 350˚F. Butter a 6 cup bread loaf pan and dust with flour.
  • In a medium mixing bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a measuring cup, combine milk, zest of 1 orange (reserve 1 teaspoon for the glaze), and orange juice. Set aside.
  • In a large mixing bowl, cream together butter and granulated sugar on medium/high speed for 2-3 minutes. Beat in eggs until well incorporated.
  • Add flour mixture in 2 parts, alternating with the milk mixture and mix on medium/low speed just until incorporated.
  • Toss cranberries with ½ tablespoon flour, then fold them into the batter just until incorporated.
  • Spread the batter into your prepared pan and bake for 45-50 minutes until golden and a toothpick inserted comes out clean.
  • Let cool in pan for 10-15 minutes, then transfer the loaf to a wire rack to cool completely.

To Make the Glaze

  • In a separate bowl, stir together powdered sugar, orange juice, and reserved zest until smooth, adjusting consistency as needed.

Notes

If using a dark pan, reduce the oven temperature by 25˚F for a darker loaf pan.
