Ingredients
  

  • 200 g dark chocolate (70%) chopped
  • 125 g unsalted butter cut into cubes
  • 150 g sugar
  • 100 g brown sugar
  • 2 large eggs
  • 130 g flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • fleur de sel optional

Instructions
 

  • Prepare all ingredients in advance, preheat the oven to 180°C, and line a baking sheet with parchment paper.
  • Melt the butter and chocolate in a small saucepan over low heat, stirring constantly.
  • Beat the eggs with the sugars for exactly 5 minutes, then reduce speed and slowly add the melted chocolate for another minute.
  • Mix all measured dry ingredients together. Quickly fold the dry mixture into the chocolate mixture.
  • Drop small scoops of dough onto the baking sheet, leaving space between each cookie.
  • Sprinkle with fleur de sel and bake for 10-12 minutes until slightly cracked. Let cool for at least 20 minutes before serving.

Notes

Best enjoyed the same day while still warm, but can be stored in an airtight container or frozen for several weeks.
