  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 large potatoes, diced
  • 1 cup mushrooms, sliced
  • 1 cup green beans, trimmed and cut into pieces

Liquid Ingredients

  • 2 cups red wine preferably a full-bodied variety
  • 4 cups beef broth
  • 2 tablespoons tomato paste

Aromatics and Seasonings

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 2 leaves bay leaves
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Cooking Steps

  • In a large Dutch oven, heat olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.
  • In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  • Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 5-7 minutes.
  • Return the browned beef to the pot, along with any juices that collected while resting.
  • Stir in the beef broth, tomato paste, thyme, bay leaves, carrots, and potatoes. Season with salt and pepper.
  • Increase the heat to high and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 hours, stirring occasionally.
  • After 1.5 hours, add the mushrooms and green beans. Continue to simmer for an additional 30 minutes, or until the beef is tender and the vegetables are cooked through.
  • Taste the stew and adjust the seasoning with more salt and pepper if necessary.
  • Remove bay leaves before serving. Garnish with fresh parsley.
