Ingredients
  

  • 8 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts
  • 1 pound Italian sausage
  • 1 medium onion
  • 2 teaspoons minced garlic
  • 14.5 ounces can diced tomatoes
  • 1 cup chicken broth
  • olive oil to taste
  • salt to taste
  • pepper to taste
  • Italian seasoning to taste

Instructions
 

  • Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chicken seasoned with salt and pepper; cook until no longer pink (5-7 minutes) and remove from skillet.
  • In the same skillet, add sausage, breaking it up as it cooks until browned (about 5 minutes).
  • Sauté chopped onion and red bell pepper until softened (4-5 minutes), then add minced garlic for an additional 30 seconds.
  • Return chicken to the skillet; add diced tomatoes, chicken broth, and Italian seasoning. Simmer for about 5 minutes.
  • Toss in cooked penne until well-coated with sauce; garnish with fresh basil if desired.
