- 8 ounces penne pasta
- 1 pound boneless, skinless chicken breasts
- 1 pound Italian sausage
- 1 medium onion
- 2 teaspoons minced garlic
- 14.5 ounces can diced tomatoes
- 1 cup chicken broth
- olive oil to taste
- salt to taste
- pepper to taste
- Italian seasoning to taste
Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken seasoned with salt and pepper; cook until no longer pink (5-7 minutes) and remove from skillet.
In the same skillet, add sausage, breaking it up as it cooks until browned (about 5 minutes).
Sauté chopped onion and red bell pepper until softened (4-5 minutes), then add minced garlic for an additional 30 seconds.
Return chicken to the skillet; add diced tomatoes, chicken broth, and Italian seasoning. Simmer for about 5 minutes.
Toss in cooked penne until well-coated with sauce; garnish with fresh basil if desired.
