Ingredients
  

  • 8 ounces fettuccine pasta
  • 1 pound boneless, skinless chicken breasts
  • 3 cups fresh spinach
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • Salt and pepper to taste

Instructions
 

  • Cook the fettuccine in salted boiling water until al dente, then drain.
  • In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, cooking until browned (6-8 minutes). Remove from skillet.
  • Sauté spinach and garlic in the same skillet until wilted (2-3 minutes).
  • Add butter and cream; simmer before gradually stirring in Parmesan until smooth.
  • Return chicken and pasta to the skillet, mixing well with the sauce.
  • Serve garnished with parsley.
