Ingredients
  

Legumes and base

  • 2 cans cannellini beans or Great Northern beans
  • 1 tablespoon olive oil
  • 3 cloves garlic thinly sliced
  • ½ small yellow onion finely diced
  • 1 tablespoon tomato paste
  • 1 can crushed tomatoes or tomato purée
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Cheese and garnish

  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • to taste Fresh basil or parsley for garnish
  • to serve Toasted sourdough bread or baguette

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Peel and slice garlic cloves, and finely dice the onion.

Sizzle the Base

  • Heat olive oil in a large oven-safe skillet. Cook diced onion for about 5 minutes till softened, then add garlic and cook for another minute.

Bloom the Paste

  • Add tomato paste to the center of the pan, cooking it for about 2 minutes until it turns deep brick-red. Mix it with the onions and garlic.

Simmer the Sauce

  • Pour in crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Let simmer for 5-8 minutes.

Fold the Beans

  • Drain and rinse the beans. Fold them into the sauce gently without mashing.

Layer the Cheese

  • Turn off the heat and smooth the bean mixture. Layer shredded mozzarella and grated Parmesan evenly on top.

Bake the Pan

  • Bake in the oven for 15-20 minutes until cheese is bubbling and golden brown. Let sit for 5 minutes.

Serve the Bake

  • Garnish with fresh basil or parsley and serve directly from the skillet with toasted sourdough or baguette.
