For the Casserole
- 2 cups sliced mushrooms can substitute with dried mushrooms (rehydrated)
- 1 cup cooked rice consider quinoa or cauliflower rice for low-carb option
- 1 cup shredded cheese can try cheddar, mozzarella, or dairy-free cheese
- 1 cup heavy cream or sour cream; Greek yogurt is a lighter alternative
- 0.5 cup chopped onion shallots can be used for milder taste
- 2 cloves minced garlic fresh garlic preferred
- 1 tablespoon olive oil any light cooking oil can be substituted
- 1 teaspoon dried thyme can replace with Italian seasoning or fresh thyme
- salt to taste

How to Make Cheesy Mushroom Casserole
Preheat the oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent (3-4 minutes). Toss in sliced mushrooms and dried thyme, stirring until softened (5-7 minutes).
In a large bowl, mix sautéed vegetables with cooked rice, heavy cream, and shredded cheese. Season with salt and pepper.
Pour the mixture into a greased 9x9-inch baking dish, spreading evenly. Sprinkle an additional ½ cup of cheese on top.
Bake for 25-30 minutes until the top is bubbly and golden brown.
Allow to cool for 5 minutes before serving.
