For the Casserole

  • 6 large Croissants Feel free to substitute with other flaky pastries if desired.
  • 8 slices Bacon Can be swapped with turkey bacon or omitted for a vegetarian option.
  • 8 large Eggs Opt for a milk alternative if you're going dairy-free.
  • 2 cups Milk Preferably whole; almond or oat milk can be good substitutes.
  • 1 cup Heavy Cream You can use additional milk for a lighter version.
  • 1 cup Chives Finely chopped; green onions work as a substitute.
  • 1 tablespoon Thyme Dried thyme can be used in a pinch.
  • 1 teaspoon Kosher Salt Adjust with table salt if necessary.
  • 1 teaspoon Freshly Ground Black Pepper White pepper can be a suitable alternative.
  • 1 pinch Cayenne Feel free to omit it if you prefer a milder flavor.

For the Cheese Topping

  • 1 cup Shredded Gruyère Divided; can be substituted with mozzarella or sharp cheddar.
  • 1 cup Shredded Mozzarella Divided; any mild cheese can be used for alternatives.
  • 2 tablespoon Butter Can use cooking spray as a substitute.

Steps

  • Preheat your oven to 350°F (175°C).
  • Lightly coat a 9x13 inch baking dish with butter or cooking spray to prevent sticking.
  • Tear the large croissants into quarters and scatter them evenly in the prepared baking dish.
  • In a skillet over medium heat, cook the bacon until crispy, then crumble it into small pieces and sprinkle over the croissant layer.
  • In a bowl, whisk together the eggs, milk, heavy cream, chives, thyme, salt, pepper, and cayenne until well combined.
  • Pour the egg mixture evenly over the croissants and bacon, making sure every piece is well coated, and top with both shredded Gruyère and mozzarella cheeses.
  • Cover the assembled casserole with plastic wrap and refrigerate overnight to allow flavors to meld.
  • Remove the casserole from the refrigerator and bake uncovered for 30-45 minutes, or until the top is golden brown and bubbly.

Notes

This casserole can be prepared the night before for a quick breakfast option.
