Ingredients
  

  • 8 oz short pasta (elbow macaroni or rotini)
  • 1 lb lean ground beef
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 14.5 oz can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • Chopped pickles, green onions, or sesame seeds for garnish optional

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions for al dente, about 7-8 minutes. Drain and set aside.
  • While the pasta cooks, heat a large skillet over medium-high heat. Add the ground beef and cook for 3-4 minutes, breaking it up with a spatula.
  • Add chopped onion and cook for 2-3 minutes until softened. Stir in minced garlic and sauté for 30 seconds.
  • Stir in diced tomatoes (with juice), tomato paste, beef broth, yellow mustard, ketchup, Worcestershire sauce, paprika, salt, and pepper. Mix well to combine.
  • Reduce heat to medium and simmer for 5-7 minutes until the mixture thickens slightly.
  • Add cooked, drained pasta to the skillet. Toss everything to evenly coat the pasta.
  • Sprinkle shredded cheddar and mozzarella cheeses over the pasta. Stir gently until the cheese is melted and the pasta is creamy and cheesy, about 2 minutes.
  • Remove from heat. Garnish with chopped pickles, green onions, or sesame seeds, if desired. Serve immediately!
